Crispy Oven-Fried Baked Chicken

Recipe modified from Cafe Delites

I’ve made this recipe a million time and finally updated my modifications to the original recipe. You will not be disappointed. The skin is crispy and nicely seasoned and the chicken is perfectly succulent. Enjoy!

Ingredients:

  • 6-8 skin on/ bone in chicken thighs

  • Salt and pepper to season

  • 1-1/2 cup all-purpose flour

  • 2 large eggs

  • 4 tablespoons milk

  • 1 tablespoon soy sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 3/4 teaspoon salt (or to taste)

  • 1 teaspoon paprika (sweet or smoky)

  • 1 3/4 cups Panko breadcrumbs

  • 1/3 cup canola oil

  • ½ teaspoon cayenne pepper (this is optional)


Instructions:

  1. Preheat oven to 400°F.

  2. Pat dry chicken and season with salt and pepper. Set up a workstation with 3 shallow bowls and a non-stick baking sheet. Set the baking sheet at the end of the 3 bowls. In one bowl, add the flour and set aside. In the second bowl, whisk together eggs, milk, soy sauce, garlic powder, onion powder, the 3/4 teaspoon of salt and paprika. In the third bowl, mix the Panko with the canola oil. Fluff this with a fork to make sure all breadcrumbs are moist. Sprinkle in the cayenne and mix with your fork until it’s blended in.

  3. Working one by one, evenly coat the chicken in the flour, then dip into the egg mixture, then dredge in the Panko mixture, pressing to coat. Place onto prepared baking sheet and repeat with remaining chicken thighs. Hot tip: Keep your left hand as your dry ingredient hand…it drop chicken into flour and then its used to toss the bread crumbs on the chicken. Right hand costs the chicken in the wet mixture. I typically sprinkle a little more cayenne and salt on each thigh once assembled on the baking sheet.

  4. Lightly spray each chicken thigh over the top with cooking oil spray (this is optional, but I have found it to crisp the chicken even more). Bake for 40 minutes. Check to to see if the crust needs more time. I usually give it 5-10 more minutes when the crust is golden brown and some edges are a darker brown. Thighs are forgiving and usually won’t dry out.
